Food protein structure-function relationships and engineering
As an interdisciplinary food protein lab, our research focuses on both protein biochemistry and biophysics. The Yada lab concentrates primarily on the structure-function relationships of aspartic proteases. Specifically, our research centres on understanding protein folding, the roles of specific residues and/or domains to enzyme function and protein-membrane interactions, the commonality of structure-function relationships across the aspartic protease family and the nature of biochemical changes occurring in food plants post-harvest.
